I'd like to know which Canon Pixma MP models allow the use of third party ink cartridges.

Basically any of them will but the newer versions such as the MP500/530, MP800/830, etc... will allegedly (ie: there's no legal clarification on this yet) invalidate your warranty if you do.

To be completely sure you could go with either of these:

MP750, MP780... There are lesser models but my recommendation would be the MP780 if you can get one... Good workhorse and non-chipped..
