Epson R260/R265/R270, R360/R380/R390 (WIB)
This link from Inkrepublic provides a guide to completing the waste ink tank modification on the R260/265/270, R360/380/390... It's entirely possible this will be the layour for later (newer) printer models so this setup will most likely apply to later printers too.

Important Note: The tubing exiting behind the printer side panel can be crimped/constricted by the panel itself which causes flow issues so it may be more appropriate to modify your printer by drilling a hole in the panel for the tube to exit or use a small wedge near the tube exit point to ensure crimping does not take place.
Amendment: Turns out I was mistaken regarding these models. Early indications were that this new design used a hollow tank for waste ink but that turns out to be incorrect. The tanks still use a padding to absorb the ink so spillage issues are minimal and the previously suggested need for a plug for the tank is probably overly cautious.

Reports back from a couple of users who've tried this method have indicated that InkRepublic have made this look a tad easier than it is.
Apparently the case has no spaces for the tube to be allowed out so you will need to modify the side panel in order to get the tubing out. Of course you could always leave the side panel off but this isn't necessarily recommended as it can cause problems with sensors within the printer.

Further research has indicated that the R380 is similar in design to the R360 and a number of other printers so the title has been updated accordingly.
The RX580 has a hatch/trap-door in it so this has been split to a different thread of its own. There may be some countries with a model which still uses the approach for the R360, etc... so I'm leaving a reference here just in case.
